Everything I Hoped It Would Be

I know I have been posting infrequently, but I had a culinary experience recently that I simply HAD to share. 

I recently dined at a Fort Smith restaurant that is starting to include more local ingredients in its fare.  One of those ingredients is an Arkansas honey in a Brie and Honey Grilled Cheese Sandwich.  It was pretty good--it's hard to go too wrong with a sweet-salty combination.  I thought the honey somewhat overpowered the brie flavor, though, and it got the wheels in my head turning as to how this could be improved upon. 

It didn't take long before it occurred to me--maple syrup!  And what goes with maple syrup better than a sharp white Vermont cheddar?  I have been known to take slices of sharp cheddar and dip them into maple syrup and just eat that for a snack.  But a maple syrup and sharp cheddar grilled cheese?  Why hadn't I ever done this before??

I tried it out last weekend, and it was THE BEST SANDWICH I'VE EVER EATEN!  I hope my excessive use of capital letters communicates to you how strongly I feel about this.  I've included instructions below, so you too can enjoy this marvelous combination. 

Butter one side of two slices of bread.  Heat skillet.  Place 1 slice butter-side down, and drizzle evenly over the surface approximately 1-2 tablespoons of maple syrup.  Place slices of sharp cheddar on top (I used Cabot, but if you have access to Grafton, Shelburne Farms, or any other SUPER awesome cheddar, feel free to substitute), then place the second slice of bread on top, butter-side up.  Finish cooking as you would any grilled cheese.  Prepare to be amazed. 

The next day, I tried the same method with swiss cheese and raspberry jam.  It was also extremely delicious, but the maple-cheddar grilled cheese was out of this world.
