Day 146 & 147: Relishing the Weekend

Beet Relish, that is! Hahaha. Ha. No but seriously, if you like beets, you should try making this relish. The recipe is in the book Putting Food By, and I'd never made it before but knew from the ingredients that it would be good. It is a mix of shredded beets and cabbage, sweet and sour with a zing from some horseradish. I can see it being delicious with various meats, along side pirogi maybe, or on a sandwich with sharp cheddar. I am having so much fun canning this year, I've made so much more than I ever have. My pantry is filling up with summer in jars. Fall and winter will be so delicious.

It was a very hot weekend. We went to the pool in the evenings and hid in the air conditioning for most of the day. It's like reverse hibernation. I can't wait for fall. 

In the news, we've been seeing some schools in different parts of the country try to open for the fall and get immediately shut down because cases pop up. It makes us all the more confident with our decision to do remote learning, no matter how badly it goes. The first day of school is in about two weeks. Time to start figuring out how we're going to do that in our tiny house with no walls.
